Lemon Sour Cream Muffins

Happy 2016! Mine started with a nice dinner and party at my friend’s house. We had a really good time and enjoyed lots of awesome food! Now time to GET BACK IN SHAPE! But before I do that, let me share with you this sweet, sweet, sweet muffin recipe!

I’ve made them a LONG time ago and, as it often happens to me, I forgot to post here … but this 2016 is full of good resolutions and one of them is to become more consistent with my recipe sharing…

Ingredients (makes 4 muffins):

  • 1 cup all purpose flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup butter, melted
  • 1/2 tsp vanilla extract
  • 1 pinch of salt
  • 1/2 cup + 1 tbsp sour cream
  • 1 egg yolk
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 cup lemon custard
  • powdered sugar

In a large bowl combine egg yolk, melted butter, sour cream, lemon juice and zest and vanilla extract

Stir well until smooth

Add dry ingredients (flour, baking soda and powder, salt and sugar)

Stir just enough to combine. A few limbs here and there are OK!

Spoon butter into cup (fill 1/3), add 1 tbsp of lemon custard and cover with more batter. You need to fill up the muffin cup to about 2/3.

Bake at 180 C in pre-heated oven for about 20 min.

Remove and let cool down completely then sprinkle with powdered sugar and serve!
