Mexican Hot Chocolate Cookies
It’s just THAT time of the year when you’ve got to bake, bake and bake again LOTS of cookies. December, the cookie-month just started and I couldn’t be more excited to start this season with a very special recipe! Hot Chocolate Cookies! Yes!
I loved them and I’m sure you will too!
Ingredients (makes 15 cookies):
- 1 cup all purpose flour
- 1 egg
- 1/2 cup + 1 tbsp sugar
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter, soften
- 1 tsp ground cinnamon
- 1/2 tsp chili powder (optional)
In a bowl sift flour, cocoa powder, salt and baking powder. Set aside
In a bowl of your electric mixer beat butter and sugar until light and fluffy. Then add one egg and mix until combined
Add the dry ingredients and mix until just incorporated.
In a bowl combined ground cinnamon, 1 tbsp sugar and the chili powder. Stir
Form balls of dough and roll them into the chili/cinnamon mixture to coat. Flatten them down gently
Bake them at 200 C for about 10-12 min. Remove from the oven and let the cookies cool down completely on a wire rack.
Store them in a air-tight container.
