Banana Bread with Walnuts and Flaxseeds
Quick bread are my new obsession. They are, as their name says, QUICK which makes them quite convenient when time is tight but a good slice of bread is absolutely necessary.
I love banana bread but I was looking at making an healthier version of the traditional recipe, thus I decided to reduce the amount of butter, use oat flour and incorporate some flaxseeds!
The result? A moist and soft loaf perfect for breakfast with some jam or peanut butter.
Here is the recipe!
Ingredients (makes one loaf):
- 2 tbsp. + 1 tsp of unsalted butter
- 1/2 cup oat flour
- 3/4 cup all-purpose flour
- 1/4 cup ground flaxseeds
- 3/4 tsp salt
- 1/2 cup light brown sugar
- 1 tsp baking powder
- 1 whole egg + 1 egg white
- 1 tsp vanilla bean paste
- 3/4 cup very ripe mashed bananas (about 2 medium bananas)
- 1/2 cup toasted and chopped walnuts
Pre-heat oven to 180 C. Using the 1 tsp of softened butter, grease a 9*5*3 inch loaf pan
Whisk together the flours, flax seeds, baking powder and salt
In a bowl of your electric mixer with a paddle attachment whisk the egg and egg white on low speed for about 2 min.
Mashed the bananas
then add the melted butter, sugar, vanilla extract and banana to the eggs. Mix until combined.
Add the dry ingredients to the wet ingredients and mix on low speed until incorporated (10 seconds – do not over-mix).
Add the chopped walnuts and stir them into the batter.
Transfer mixture into the prepared pan and bake for about 35-40 min or until bread is golden-brown in color.
Remove from the oven, wait 2 min then transfer it onto a wire-rack and let it cool down completely.
Slice it up and serve it with your choice of spreads.
