Sweet Potato, Oats and Chocolate Chip Cookies
A healthy nuts and cookie lover like me could possibly not fall in love with these cookies!
They call for some super food like sweet potatoes and oats but get the extra kick from some big chunks of dark chocolate.
I baked a big batch last Sunday as I was in need of something sweet to give me some extra energy for my long day at the baking expo in Hongqiao!
Here is the recipe if you want to give them a try!
Ingredients:
- 1/2-1/4 cup oat flour
- 1 egg
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/3 cup mashed sweet potato
- 1/2 cup coconut oil or butter
- 1/2 cup brown sugar
- 1/2 tsp vanilla bean
- 1 cup quick oats
- 1/2 cup chocolate chip or chunks
In a bowl of your electric mixer combine butter (or coconut oil) and sugar.
Beat on medium speed until creamy (3-5 minutes) then add the egg and beat until incorporated.
Roast and mash some sweet potatoes and add a 1/3 heaping cup to the mixture together with some vanilla bean paste (or vanilla extract).
Once the sweet potatoes are well mixed into the batter, add the dry ingredients: oat flour, oats, baking powder, cinnamon and salt.
Mix on slow speed just enough to incorporate all the ingredient together.
Chop up some dark chocolate and add that to the batter
Stir well
Now, using an ice-cream scoop, on a baking tray portion out the batter into single balls of dough
Bake the cookies at 180 for about 10-12 minutes. Let them cool completely on a wire-rack before storing them.
These cookies are delicious for up to 5 days 🙂
