Overnight Chia Pudding
Chia seeds are one of those Super Food everyone is talking about nowadays. They are good for you on so many different levels: lose weight (as they help you feel full), balance blood sugar, reduce cholesterol (as they provide Omega 3), keep you young (as they are anti-oxidants), and many more.
I regularly incorporate them into my salads, cookies, yogurts to add extra creaminess and crunchiness (as well). The other day I decided to try make with them a super easy overnight pudding. All you need is full fat soy milk and, of course a good handful of chia seeds!
Here is the recipes my lovely foodies 🙂
Ingredients (serves 3):
- 1/5 cup unsweetened soy milk
- 1/4 cup chia seeds
- Fresh fruit (berries, peaches, raspberries, …)
- Sliced almonds or crashed walnuts
Grab some unsweetened, full fat soy milk
then grab some lovely chia seeds
In a bowl of glass container pour milk and add the chia seeds.
Let is seat in your fridge overnight, shaking it from time to time. The following morning, blend everything until creamy
Portion it out and top it up with fresh fruit and sliced almonds or crushed nuts.
