Beetroot tomato sprouts and sardines salad with mint and lemon dressing

On a hot summer day, what’s best than a refreshing, nutritious salad?
The other Friday I made myself this beetroot salad with tomatoes, crumbled sardines and a fresh mint and lemon dressing. It was lovely.

Here is the recipe if you wish to replicate it at home!

Ingredients (serves 1):

  • 1 medium size beetroot, boiled
  • 1 medium tomato
  • 1/2 lemon, juice
  • 1/2 cup fresh sprouts
  • 2 tbsp. extra virgin olive oil
  • a handful of fresh mint leaves
  • 2 sardines in olive oil
  • 1/4 tsp salt

Start up by slicing the beetroot

and the tomato

wash up the sprouts

in a mortar place the fresh mint, lemon juice, oil and salt.

Paste until most of the mint is creamed

Chop up some sardines

Assemble your salad by placing slices of beetroot alternated to slices of tomatoes. Top it off with the sprout and lay the sardines on the plate. Drizzle with the dressing and serve!
