Yes, you heard me, this is the perfect coconut rice recipe. It is very simple to make, but it will get you a soft, moist rice that you can pair with curries, fish, hot soups and what more!
In Asia people cannot dine without a bowl (or 2) of steamed rice. It’s like for us Italian, we will never have a dining table without some freshly baked bread. There are many ways you can cook rice: simply steaming it, adding lemon zest and olive oil, adding some green onions and eggs.
I love coconut milk, so this recipe makes for me the best rice I could wish for.
I am slowly recovering from my wisdom tooth surgery and this soft rice was just perfect for my sore mouth.

Ingredients (makes 2 cups):
- 1-1/2 cup Jasmine rice
- 1 tbsp coconut oil
- 1 cup coconut milk
- 2 cups coconut water
- 1 tbsp fresh shredded coconut
Place rice on a strainer and rinse it under cold water until the water runs clear. Let the rice drain completely
Into a medium size saucepan, heat up the coconut oil. Add the Jasmine rice and stir on medium-low for a couple of minutes or until rice is almost transparent.
Add the coconut water and milk, stir well
Add in the fresh shredded coconut, Bring the mixture to a simmer, cover with a lid and let it cook on low until all liquid is absorbed (about 12-15 min) – Keep an eye on it!
Turn off the heat and let the rice rest for about 5 min. Then fluff it gently with a fork and serve it.
