Mushroom, Chicken and Barley Soup

I think this is going to be the last soup recipe for this season… It was very hot here in Shanghai last week today it seems like winter is back, it is cold and windy but I am sure Summer will be here soon and I will abandon any hot dishes and embrace salads, grill and baked goods!

But before that, I want to share with you this very tasty and very healthy recipe which calls for mushrooms, chicken and barley.

  • Ingredients:
  • 200 gr barley
  • 1.2 l vegetable broth
  • 500 gr mushrooms
  • 3 tbsp. extra virgin olive oil
  • 1/2 onion
  • salt and pepper
  • 1 tbsp. fresh parsley
  • 1/2 chicken breast (no bone, no skin)

Dice up the chicken breast and path it dry.


Chop up the onion and heat up the oil into a sauce pan. Sauté’ the onion until soft. Add the chicken, season with salt and pepper and stir on medium-high for about 2 min.


Wash and dice the mushrooms


add them to the chicken and stir for 1 minute.


Wash the barley


and add it too


Pour in the vegetable broth, cover with a lid and let simmer for about 30 min, or until barley is cooked. Adjust with salt if needed.


Add some fresh chopped parsley


your soup is ready


nice and hearty


Serve it up!
