First batch of Christmas cookies done!
Many more will follow!
These honey cookies will knock your socks off. They are delicious, easy and cute. Could you ask for more?
Here is the recipe:
- 50 gr of unsalted butter
- 150 gr flour (+ more to dust)
- 1 whole egg
- 25 gr honey
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 75 gr granulated sugar
for the icing
- 100 gr powdered sugar
- 3 tbsp water
In a bowl of your electric mixer combine all the ingredients together
and mix until the dough comes together
wrap it in plastic paper and using a rolling pin, roll the dough into a 1/2 cm thick circle. Refrigerate for 1 hour.
Using a cooking cutter, cut out the cookies in the shape you prefer (Dust the cutter into flour will make your life easier…try and see!)
Bake the cookies in pre-heated oven (180 C) for about 12 min or until the edges starts to get some golden-brown color. Remove from the oven and let the cookies cool down
For the icing, combine the powdered sugar with 3 tbsp of water, you want the icing to be thick!
Place it into a pastry bag and decorate your cookies as you prefer, I just lined the icing around the edges.
Let the icing cool down completely before storing.
Enjoy with a hot cup of chocolate
