For those of you who, like me, have got ZERO free time left, here is an easy, tasty and super quick recipe to whip up dinner in less than 30 min.
I bought a bag of frozen seafood mix from Epermarket a few weeks ago and I had it stored in my freezer for (of course) emergency, last minute meals. The bag is 1 kg and costs only 87 RMB, so also a good bargain.
If you want to add extra flavor to your risotto, I would suggest to incorporate some fresh shrimps and clams!
Here is the recipe, try it and dinner will be ready in less than half an hour π
Ingredients (serves 2):
- 400 gr frozen seafood mix
- 160 gr arborio Italian rice
- 1/2 small onion, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp butter
- 1 tbsp fresh chopped parsley
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 cup dry white wine
- 2- 3 cups vegetable broth or fish broth
- zest of 1 lemon
Take the seafood mix out of the freezer and let it thaw overnight
In a sauce pan saute the chopped onion in 2 tbsp of extra virgin olive oil
add the seafood mix, season with salt and pepper and stir. Add the zest of one lemon and cook on medium heat for about 2-3 minutes
Then pour in the white wine, turn on high heat and let the juice reduce
when the wine has completely evaporated, add the rice and toast it in the pan for a couple of minutes at medium heat
Now start adding the broth, 1/2 cup at a time, waiting for the juice to reduce before adding more. Keep doing so until the rice is cooked. Then add 1 tbsp of butter
some freshly chopped parsley
stir all the ingredients together and server immediately!
Enjoy with a glass of chilled pinot gris or chardonnay
