Pesto Bread


because I have had a relaxing weekend

because in 1 month I will be home with my family to celebrate Christmas

because I love bread

and because I love ya!

I have decided to bring back on the front page one of my most favorite bread recipe: the Pesto Bread!

I have actually made it last weekend so I have re-shot the pictures.

Ingredients (for one loaf of bread):

  • 2 cups bread flour + 1/2 cup more as needed
  • 1/2 packet of instant yeast
  • 1/2 cup warm water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tbsp sugar
  • 2-3 tbsp pesto (check my recipe for homemade pesto)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese

Dissolve yeast and sugar into lukewarm water, let it rest for about 10 min, until it is all bubbling.


In a bowl of your electric mixer (with the hook attachment) combine flour, salt, olive oil and the yeast mixture



Mix the ingredients until you get a smooth and elastic dough, add more flour if needed




Add a little olive oil in a bowl, place the knead dough into the bowl. Cover with plastic wrap, place in a warm and dry place and et raise for about 2 hours or until it doubles in size


Roll out the dough in a rectangular shape on a slightly floured surface. Spread a few tbsp on pesto on top and sprinkle some Parmesan cheese and shredded mozzarellabread6

Roll up the dough sealing well the borders



With a sharp knife cut the dough down the center length wise



Take the two cut pieces and braid them together



Place the bread into a slightly greased loaf pan. Cover with plastic wrap and let raise for an other hour. Bake at 180 C for about 30-35 min. Remove from the oven and allow to cool


Enjoy with your choice of dips
