What’s better than cookies and Nutella?
When I was a child I used to take a few shortbread cookies, cover them with a good, thick layer of Nutella and eat them as an afternoon snacks while I was making my homework. I must admit I have kept doing this until a few years ago, when people started looking at me like I was some kind of totally crazy woman…so I decided to incorporate Nutella into my cookies!
I brought these cookies to my company family day last weekend and everyone loved them! Give this a try and let me know what you think!
Ingredients:
- 3/4 cup butter
- 1/2 cup white sugar (150 g)
- 3/4 cup brown sugar (165 g)
- 2 cups flour ( 220 g)
- 2 eggs
- 1 tsp baking powder
- 1/8 tsp salt
- 1 or 2 tbsp vegetable oil
- 1/2 cup Nutella
In a bowl of your electric mixer combine the sugars and butter. Beat at slow speed until creamy
Add the eggs, one at a time, beating well after each addition
In a separate bowl combine flour, baking powder and salt. Add the dry ingredient to the butter/egg mixture together with 2 tbsp of vegetable oil and mix until combined. Do not over-mix the batter at this stage
Now drop a few tsp of Nutella into the batter
and gently scoop it out onto your baking tray lined with parchment paper
Bake at 180 C for about 12 min. Let the cookies cool down on a wire rack before storing them into an air-tight container
