I love breakfast, it’s that one single meal of the day that I can never skip!
I can easily give up on lunch or dinner but I could never miss breakfast.
In fact, every morning, no matter how early my day needs to start, I take 15 to 20 min to seat down and enjoy a nice meal. During the week my breakfast is somehow simple, milk and oats, fresh fruit and yogurt or some cookies and a cappucino.
During the weekend, instead, I like to dedicate a bit more time and treat myself with something special.
The other weekend I made this fruity pancakes with fresh strawberries, blueberries, banana and kiwis.
Here is the recipe!
Ingredients (serves 2):
- 4 slices of bread
- 4 eggs
- 2 caps of milk (whole fat) or half and half
- 1 tsp vanilla extract
- 2 tbsp sugar
- 1 cup fresh strawberries
- 1/2 cup fresh blueberries
- 1 kiwi
- 1 banana
- 1/2 cup maple syrup
- 1 cup whipped cream
- 1 tbsp butter or vegetable oil
Get all you need on your kitchen counter! Fruit, milk, eggs…
Cut the slices of bread in half
In a dish, mix together egg yolks, milk, sugar and vanilla. Whisk to combine. Dip bread slices in mixture, coating both sides.
Heat iron skillet or griddle over medium heat. Sizzle butter in the pan when hot. Cook French toast on both sides until golden brown, being careful not to burn.
Wash, peel and slice up the fruit.
Serve your french toasts with a side of fresh fruit, 1/2 cup of whipped cream and a drizzle of maple syrup on top!
Enjoy nice and warm!
