I am back!
I have spent the last 2 weeks on the east coast of the United States, in New York City and Cape Cod, and I have literally fallen in love with the so famous “big apple”. The city has just possessed me and it was SO hard to leave.
I could easily see myself spending my whole life in the city that never sleeps. It has that vibe and personality that I have rarely found in any other places that I have visited (and I travel quite a lot).
I will share with you some of the pictures I have taken, specially of the delicious food that I ate there: pancakes, waffles, burgers, steaks, cupcakes…and more more more!
Back to Shanghai is DIET time! Cause, believe me, I have gained 2 kilos over my vacation and these 2 kilos need to LEAVE my body ASAP!

So to bring some healthy food onto my dining table I have baked this delish blueberry bread with oats and whole wheat flour. Give this baby a try!
Here are the instructions 🙂
Ingredients (make one loaf):
- 1 cup fresh blueberries
- 2 eggs
- 1/2 cup + 1 tsp of butter
- 1-1/4 cup whole wheat flour
- 1 cup oats
- 1 tsp baking powder
- 1 tbsp lemon zest
- 1 large ripe banana
- 1/2 cup brown sugar
Preheat oven at 190 C (350 F)
In a bowl of your electric mixer beat up the brown sugar with the butter
Crack in the eggs, one at a time, mixing well after each addition
Slice up the banana and add that to the mix. Stir until creamy
Next up, add the lemon zest, flour and baking powder
then the oats. Stir at slow speed until all ingredients are combined
Add the blueberries and using a spatula, gently fold them into the batter
Butter and flour a bread loaf pan
then pour in the bread mixture. Sprinkle the top with some more brown sugar and oats
and bake for about 40 min. Remove from the oven and let it cool down completely
When ready to serve, slice up the bread
and enjoy for breakfast or with your afternoon tea!
