It’s time to run another cooking contest here on Expatcucina!
After the successful first recipe competition, now we are ready for a new challange. Rules are the same, you will have to create one single recipe using all the ingredients that I have selected for this month contest. You can add any other ingredients you would like and make a main, or a starter or a side dish. That’s totally up to you!
Participants can email me their recipes with a picture of their final dish, from today until August 31st, then I will select one winner who will receive one free cooking class!
This month ingredients to use are:
Crispy Salad
Read Leaf Spinach
Feta Cheese
Cherry tomatoes
Mango
Artichokes
Purple Onion
Blueberries

As I have done last month, I will share with you the recipe that I have created with those ingredients.
Ingredients (serves 2):
- 80 gr fresh blueberries
- 1/2 purple onion
- 4 big artichokes
- 1 Mango
- 40 gr feta cheese
- 2 cups fresh crispy salad and red spinach
- 4 whole wheat tortillas
- 1 clove garlic
- 1 tbsp extra virgin olive oil
- salt and pepper
Grab all the ingredients you need
Wash the artichokes,
remove the external leaves
cut off the tips of the internal leaves
then cut the artichokes in half and remove the internal “dry” heart…don’t know how else to call it…
then cut them into halves
and saute’ them in a skillet with the olive oil and garlic. Season with salt and pepper and cook for about 10 min.
Wash the tomatoes and cut them in halves
Peel and slice up the mango
Chop up the purple onion finely
Then heat up a skillet and toast the tortillas on both sides for a couple of minutes
then fill up each tortillas with a few leaves of crispy salad and red spinach, purple onion, a few blueberries, a few slices of mango, some feta cheese
Wrap it up and serve with more salad as a side!
