In my last cooking classe, I taught my students how to make at home 3 pasta sauces. They were all VERY surprised to find out that making tasty dressing is actually not complicated, and they did have a lot of fun!
Today, I want to share with you how to home make fresh tomato sauce. In the summer there is such a variety of tomatoes and it is tradition in my family to prepare fresh tomato sauce and store it in our pantry for the whole winter.
Here in Shanghai, I have found that fresh, ripe tomatoes are very high in water percentage (way higher than in Italy),however it is still possible to use them and make a tasty and healthy tomato sauce.
Here is my recipe!
Ingredient:
- 5 kg of fresh tomatoes
- 1 big onion
- fresh basil
- 3 tbsp extra virgin olive oil
- salt
Select some ripe tomatoes and rinse them under cold water
Cut them into pieces and place them in a big pot with half of the onion and a small bunch of Fresh basil
Cover with a lid and let simmer for about 20 min.
Remove the cooked tomatoes and discharge the water that they have released during cooking
With an immersion blender, pure’ the tomato into a smooth sauce
Chop the remaining half onion
and saute’ it in a big saucepan with the olive oil. Pour in the tomato sauce, season with salt, more fresh basil leaves and cook on low for over 1 hour, letting it simmer on your stove. The longer it simmer (at very low heat) the better will you sauce taste!
Let your homemade tomato sauce cool down completely then store it into jars and refrigerate them.
