I love pies, but there is something special with the buttermilk ones. They are so simple, yet so delicious and I love that you can pair them with fresh fruit or whip cream or anything else that makes you skirt fly up!
If you have never made buttermilk pie, then I highly recommend you to make one ASAP. Here is my recipe!
Ingredients:
for the pie crust
- 1 cup flour
- 1 tsp white vinegar
- 3 tbsp iced water
- 1 tbsp white sugar
- 1/2 tsp salt
- 1/3 cup shortening
for the filling
- 4 tablespoons all-purpose flour
- 1-¾ cup sugar
- ½ teaspoons salt
- ⅓ cups butter, melted
- 3 whole eggs
- 1 cup buttermilk
- 1 teaspoon vanilla
Start off from the pie crust. In a bowl combine flour and chilled shortening
using your hands break the shortening into the flour until it resemble cornmeal
Add the remaining ingredients
and mix with a spoon
flatten the dough up and wrap it in plastic paper. Place it in your freezer for about 30 min.
While the pie crust is chilling, move on and make the filling.
In a bowl combine the flour, sugar and salt. In a separate bowl crack 3 eggs
beat them slightly
Add the eggs, melted butter, buttermilk and vanilla bean paste into the dry ingredients and whisk until well blended
Roll out the dough into a nice circular shape
and pour the filling into the pie shell
and bake at 170 C for about 55-60 min or until filling is set and top is golden-brown in color
Let the pie cool and then chill in the fridge until you’re ready to eat.
Then slice it up and decorate with a few slices of fresh apricot or strawberries
