Countdown to my upcoming holiday has officially started! In 1 week I will be flying with my boyfriend to BALI, in Indonesia!
I am so excited and looking forward to spend some time on the beach relaxing and enjoying some nice weather.
Beach holiday means one thing also tho: getting back in shape! So today has also officially started my regiment program made of salads, lean meats, fresh fruits and lots of veggies.
These cookies is an old recipe I’ve made many weeks ago and which I did not get the chance to post before. So you, who can, please go and make them cause they were delicious!!! 🙂
Ingredients:
- 1 cup (130 grams) all purpose flour
- 1/2 tsp baking powder
- 1/8 teaspoon salt
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 cup (60 grams) unsalted butter, room temperature
- 1/2 cup (110 grams) dark brown sugar
- 1 tbsp vegetable oil
- 2 tbsp (40 ml) molasses (lightly grease the measuring spoon to prevent the molasses from sticking)
- 1 small egg
- 1/2 tsp vanilla extract
- extra granulated white sugar to garnish
In a bowl of your electric mixer, beat the butter and sugar until light and fluffy (about 2-3 minutes)
Add the oil
molasses,
egg and vanilla extract and beat until incorporated.
Beat in the flour, baking powder and spices
At this point the dough will be very creamy
Cover it and let it chill until firm (at least 2 hours or overnight)
Preheat the oven at 180 C (375 F), line baking try with parchment paper. Place about 1/2 cup (100 gr) of white granulated sugar in a plate.
Roll the dough into 2.5 cm balls (1 inch)
Then roll them into the sugar, coating them completely
Place them on a baking sheet, spacing about 5 cm apart
and with the bottom of a glass, flatten them up.
Bake cookies for about 8-10 min, or until the tops have crinkles. Remove from the oven and let them cool on a wire rack.
Store in an airtight container for up to 1 week.
