Happy Valentine’s to you all! In love or not, today is the day to show how much you care for the people in your life: bf, gf, friends, family .
This recipe is a classic Valentine’s one, but this time, instead of shaping like hearts cookies or cakes, I’ve made ravioli filled with ricotta and speck.
The dressing is very simple, just some plain, fresh tomato sauce.

Ingredients (serves 2):
for the dough
- 200 gr flour
- 2 eggs
for the filling
- 250 g fresh ricotta cheese
- 70 g speck
- 1 tsp chopped parsley
- 1/4 tsp salt
- 4 tbsp grated Parmesan cheese
for dressing
- fresh tomato sauce
- 1 tbsp fresh chopped parsley
In a bowl combine ricotta, finally chopped speck, parmesan cheese, chopped parsley and salt
Stir together until ingredients are well combined
Prepare the dough by beating 2 eggs into the flour. Add 1 or 2 tbsp of water if necessary. You need to get a smooth dough, but not too soft. Wrap it in plastic wrap and let it rest for about 30 min.
Roll out the dough into a 5 mm circle, then using a heart-shaped cookie cutter, cut out bug hearts.
In the center of half of the hearts, place a tsp of filling,
gently brush the edges with some water and cover with other half. Press down the edges so they seal together. With a fork press down more.
Bring a pot of water to a boil and cook your ravioli for about 5-6 min. Drain and dress them with fresh tomato sauce. Sprinke the top with fresh chopped parsley and grated Parmesan cheese.
