What’s up with me and this obsession I have for cookies? I just can’t have enough. I could eat them for breakfast, lunch and dinner and never get sick of them! I love any type, shape, filling, flavor, cookies, biscuits, wafer cookies…oh gosh…I feel hungry just thinking about it!!! The cookies I’m sharing with you today have got a tasty sweet raisin filling. They are relatively healthy and very tasty! Ingredients:
- 3 cups flour
- 2/3 cup sugar
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 tsp baking powder
for the filling:
- 200 gr raisins
- 2 tbsp cornstarch
- 3/4 cup water
- 1 tbsp lemon
- 1/2 cup sugar
In a bowl of your electric mixer combine sugar and butter. Mix until creamy
Add the egg and keep stirring on low speed until well combined
In a separate bowl combine flour, baking powder and salt. With your mixer on low speed, add the flour mixture
alternating it with milk. Add the the vanilla extract. You will have a very sticky dough. Don’t worry.
Wrap it up into plastic paper and refrigerate from 30 to 60 min.
In the meantime prepare the filling. Measure up 200 g of raisins
combine them in a sauce pan with sugar, lemon juice and water and bring it to a boil. When it reaches the boiling point, turn heat down, add the cornstarch and let it simmer, stirring from time to time until mixture thickens. Set aside and let it cool down.
Roll out the dough, make it 1/2 cm thick. Then using a large round cookie cutter, cut out big circle of dough
Place 1 tbsp of filling in the center of half of the circles
Then cover with the other half. No need to press the edges down, they will seal together while baking
Pre-heat oven to 200 C and bake your cookies for about 15 min. Remove from the oven
let them cool down completely before dusting it off with powdered sugar.
Store cookies in a airtight container for up to 5 days.
