I love pancakes! It’s a special treat I make on weekends, when I have time to relax and enjoy a nice breakfast.
Yesterday for me and my boyfriend I made this new version with chocolate and Nutella. Definitely not the best choice if your trying to loose weight, but life is not always about taking the best decisions…a bit of naughtiness is also necessary for a healthy and balance life, right?
So here is the recipe and happy Monday to you all!
Ingredients (serves 2):
- 1 c + 1 tbsp flour
- 1 large egg
- 1 cup milk
- 5 tsp Nutella
- 1 tbsp powdered sugar
- 1/2 c sugar
- 1 tsp baking powder
- 2 tbsp cocoa powder
- 1 tsp butter, to grease the pan
- corn syrup
Crack the egg into the milk, and beat it in to combine
then add the flour, baking powder, sugar and cocoa powder
stir until you get a smooth and thick batter. Add more four or milk if necessary
Heat a large nonstick griddle on medium-high heat with no butter or oil. I use my crepe pan of LeCreuset and I just LOVE IT! It spreads the heat evenly to get the best pancakes/crepes ever!
Grease the pan with a tiny bit of butter
use a 1/4 cup scoop to pour batter on heated griddle. Spread out the pancake batter quickly and immediately scoop a large spoonful of Nutella into the middle of the raw pancake
then quickly cover with a tiny bit more of batter. (If you don’t cover the Nutella, it could burn when you flip it.)
When batter starts to bubble on one side, flip your pancake and cook for approximately one more minute until done. Remove from the pan and place it on a plate
Continue with the remaining batter. You should get about 4-5 pancakes
Serve immediately sprinkled with some powdered sugar and drizzled with corn syrup
