I owe you some explanations, I know! It has been almost 1 month that I haven’t posted ANYTHING here on Expatcucina. My biggest apologies!
While I was in Italy I was too busy seeing friends, buying things and spending time with my family to be able to get myself in front of the computer and write to you. I did do some cooking tho which I will post soon!
Once I got back from Italy I spent 2 days in bed puking, with food poisoning and had no energy to do anything but sleeping. After that I started my new job, which has kept me VERY busy, weekends included. And then, last but not least, my mac decided to break down so I had to take it in to a local IT guy, and you want to know what this genius did? He re-installed the operating system deleting all my files AND programs, without telling me ANYTHING. So i lost all the pictures I had shot and had no Photoshop or Office word to get anything done.
It took me a bit to re-installed all the programs I need, and today, FINALLY, i got myself to go to the kitchen and make the first Christmas recipe of the year!
These Christmas Tree cupcakes are super easy to make, yet so beautiful. Your kids will love them and you will impress you guests.
Here is the recipe!
Ingredients (makes 6):
- 125 g flour (1 cup)
- 1 tsp baking powder
- 75 ml whole fat milk
- 1 egg
- 75 gr sugar (1/3 cup)
- 50 g unsalted butter
- 60 chopped Amarena + 6 whole Amarena Fabbri
- 50 g chopped white chocolate
for the frosting
- 200 g cream cheese
- 2/3 cup powdered sugar
- 1 tbsp milk
- 1 tsp green coloring
- colorful sprinkles
In a bowl combine flour, baking powder and sugar
in a separate container mix egg and milk
then melt the butter and add it to the milk/egg mixture. Pour the wet ingredients into the dry and stir well
Chop up the amarena and white chocolate
add them to the batter and stir until well combined
Divide the batter between 6 muffin cups
and bake at 180C for about 20 min. Let the cupcakes cool down completely while you make the frosting.
Combine cream cheese, powdered sugar, green food coloring and 1 tbsp of milk.
Stir until creamy then move into a pastry bag with a star tip
Decorate each cupcake with the green frosting
then sprinkle the top with colorful sprinkles and with one whole amarena
Store for a couple of days…but I am sure they will not have a chance to last that long!
