Here is the second one for this week! Citrus Butter Cookies. TO DIE FOR!
Ingredients (makes 24 cookies):
- 150 gr unsalted butter
- 1 egg yolk
- 1 – 3/4 cup flour
- 3/4 cup sugar
- 1 pitch of salt
- 2 tbsp orange and lemon zest
- 1 tbsp orange and lemon juice
- 2 cup powdered sugar
- 1 egg white
- 1 tbsp orange and lemon zest
- 1 tsp orange and lemon juice
- 1 tbsp milk
Start off by mixing butter and sugar until creamy
add in the egg yolk and stir until combined
add the flour and salt
and mix until it comes together
then grab one lemon and one orange
zest the lemon
and the orange
squeeze in the juice of the lemon
and the orange and stir well
Scoop out tbsp of dough then roll them into balls between your hands. Place them on parchment paper
Bake for 13 min in pre-heated oven at 180 C. Take them out before they start to brown then let them cool down for 2-3 min on the baking sheet before moving them on a cooling rack
Meanwhile prepare the icing my combining all the ingredients together and whisk them until you get a pourable and thick consistence.
When cookies are completely cooled down, drizzle the top with the icing and let is stand on your counter until the icing is set.
Store your cookies in a airtight container for up to 1 week.
