If you are looking for an easy, quick and healthy meal idea you are in the right place. This dish is definitely what you are looking for. At least it was for me, as I found it to be a perfect and balance meal with veggies, protein and healthy fats.
Ingredients (serves 1):
- 300 g fresh snow peas
- 1 tbsp black sesame seeds
- 1 tbsp olive oil
- 1/2 tsp salt
- 2 whole eggs, fresh
- 1 tbsp white vinegar
Wash the snow peas and remove the edges. In a skillet heat up some olive oil, when hot stir in the snow peas. Season with salt and cook on medium-high for a couple of minutes. Turn off the heat and add in the sesame seeds.
Bring a pot of water to a boil. Add 1 tbsp of white wine vinegar. Drop into the water one big cookie cutter
then crack in it one egg
Cook for about 1 min, then remove the egg. Repeat with the second egg.
This is a VERY EASY way to perfectly poach eggs!
Lay the poached eggs on top of the snow peas and serve immediately!
