Andes Premium Catch sent me a complementary bottle of wine and a whole North Atlantic Halibut from Greenland last week! It was a kind gift Jiayi prepared for me and that I REALLY appreciated! I ate the whole thing myself for lunch! Yes, I did not share it with anyone this time. This halibut was way too good for sharing :D…I like to be selfish sometimes 😉
Here is the recipe of how I have cooked it. Very simple and healthy.
Ingredients (serves 2):
- 1 whole Halibut fish (about 800 gr), gutted
- 200 gr peeled tomatoes in can
- 1/2 orange
- 2 tbsp olive oil
- 1/2 onion
- 1/4 cup green olives
- 1 tbsp fresh chopped parsley
- 1 tsp salt
- 1/4 tsp black pepper
Chop up the onion
In a skillet heat up the oil and saute’ the onion until soft.
Open a can of peeled tomatoes
grab some green olives
slice up the orange
and add them to the skillet. Season with salt
Cook for about 10-15 min or until sauce is cooked
Sprinkle the fish with salt and pepper
Take a sheet of aluminum foil, drop one tbsp of the sauce, spread it across then lay the halibut on top and cover with the remaining sauce
Sealed the foil and bake at 200 C for about 45 min
Remove from the oven, open the foil and sprinkle some freshly chopped parsley
Bring it up to your dining table, then portion it and enjoy!
