I cannot recall when was the last time I made myself a cake…I don’t know if this can be considered a light cake…all I know is that I like it A LOT!
I love apples, so basically anything that calls for apples gets my attention. To make this cake you don’t need any fancy ingredient, just a mold and a bit of free time.
Here is the recipe. Let me know how you like it 🙂
Ingredients:
- 2 big apples
- 2 tbsp white sugar
- 30 m cognac
- 1/2 lemon, zest
- 1 tsp cinnamon
- 70 gr. spiced fruit mix
- 2 tbsp pine nuts
- 150 gr. lady finger cookies
- 150 ml milk
- 35 gr. unsalted butter
- 1 tbsp apricot jam
Peel and slice up the apple
In a saucepan melt the butter, add the apples and stir for a few minutes. Pour in the cognac and let it evaporate. Next up, add the sugar, cinnamon and lemon zest. Cover with a lid and let the apple cook until they become soft.
Turn off the heat, let the apples cool down, then add the spiced fruit mix and the pine nuts
Cover your cake mold with baking paper
Dip the savoiardi (lady fingers) cookies into the milk and lay them on and around the mold.
Fill in the cake with the apples
and crumble the remaining cookies on top of the cake so to cover it all up. Pour some of the remaining milk to moist them a bit
Bake the charlotte in pre-heated oven at 180 C for about 30-40 min. Remove from the oven and let it cool down
When warm, flip it over a plate
and brush the top with the tablespoon of apricot jam
Enjoy warm…this is what was left of it the following day…
