because one of my very good friends just moved to Japan
because it’s raining in Shanghai and I feel like just spend the whole day in bed
and because I love Japanese food!
I have decided to bring back to the main page one of my favorites: the potato salad!

As you all already know, Japanese is definitely my favorite food, it’s healthy, tasty, colorful. Besides the sushi I also love their potato salad which I have tried to reproduce at home the other night.
It is actually one of the few Japanese dish which is not super complicated…which is some sort of relief : )
For the rice vinegar, don’t be cheap and get the original Japanese one which you can find at the small Japanese store in Gubei, for the other ingredients just get what you need at the cheap Chinese grocery store.
Ingredients (for about 6 servings):
- 3 potatoes
- 1/2 carrot
- 1/2 cucumber
- 1 tbsp rice vinegar
- 3 tbsp mayonnaise
- 1/2 tsp salt
Wash, peel and boil the potatoes
Cut the carrot and cucumber into very thin slices
With a fork mash the potatoes
Then add carrots and cucumber. Adjust with salt and dress with the rice vinegar and mayonnaise .
Put in the fridge and serve cold.
