I’ve spent the last 10 days on vacation with my boyfriend in Australia. We flew to Melbourne, rented a car and drove along the Great Ocean Road up to Adelaide. It was a wonderful trip, which I enjoyed every seconds of. Unfortunately recently I have been suffering from back pain and right before heading to the airport I got the result of my CT saying I suffer from spondylolisthesis…which isn’t a good thing. Now I’ll have to do more tests and see a few specialists to understand how to treat it…
The news totally affected my mood during the trip but I managed to have a good time in OZ. My most favorite places were Victor Harbor and Adelaide. They just remained me so much about my hometown Lecce.
Food was definitely not my favorite, super heavy and a bit boring I would say…
Overall tho, it was a great experience and also my first real holiday with my bf, which definitely made this a special trip.
Before leaving for Australia I made this super bread! I had a few different nuts at home I wanted to get rid off and so I decided to throw them all into a health bread!
Here is the recipe. Enjoy!
Ingredients (make one loaf):
- 2 cups whole wheat flour
- 2 tbsp instant yeast
- 1 tbsp sugar
- 1 tsp salt
- 1/2 cup lukewarm water
- 1/4 cup of chopped pistachios
- 1/4 cup of chopped almonds
- 1/4 cup of pine nuts
- 1/4 cup sunflower seeds
- 1/4 cup chopped peanuts
- 1/3 cup dry cranberries
- 1 tbsp vegetable oil
Grab your nuts
and start chopping them up, the peanuts and pistachios
then grad the sunflower seeds
almonds and pine nuts
and the dry cranberries
and combine them into a bowl with flour and salt
In another bowl “awake” the yeast in lukewarm water and with 1 tbsp of sugar. Wait about 5 minutes for the mixture to become all bubbling,
Pour it into the flour and nuts and with your mixer stirring at slow, pour in the oil and more water as needed. Knead the dough for about 10 to 15 min, or until it gets soft and smooth
Cover it with a plastic wrap and let it rest for about 2 hours or until doubled in size.
Roll it out into a rectangular shape, then roll it up, and place it into a bread loaf pan. Let it stand on your counter covered with plastic wrap for about 30 to 40 min
In the meantime pre-heat the oven to 200 C and bake the bread for about 45 min, or until when a toothpick inserted in the center of the loaf comes out clean and the outside of the bread has got a nice golden-brown color.
Remove from the oven and let it cool down, then slice it up
and enjoy it with your preferred spread.
