What’s better than having a chocolate treat without feeling guilty? You know I always try to make healthy food, and since I can not give up on some sweets, specially in the evening after dinner, I need to treat myself with something special: a cookie, a slice of cake, a square of chocolate.
This is why I decided to make something slightly unusual but absolutely tasty and very healthy.
Try this vegan chocolate mousse made with no butter or eggs or cream, but with fresh and ripe avocados. Here is the recipe!
Ingredients (serves 4):
- 2 ripe avocados
- 100g dark vegan chocolate
- 4 Tbsp. maple syrup
- 30 g unsweetened cocoa powder
- 1 tsp. vanilla extract
- 50 ml almond milk
Melt the chocolate in a saucepan and then remove it from heat and let it cool down.
Cut the avocados in half remove the internal pit and scoop out the pulp. Place the avocados, maple syrup, almond milk, cocoa powder, vanilla extract and melted chocolate into a blender
and process until creamy
Divide into 4 serving bowls and refrigerate for at least 3 hours (it’s even better if refrigerated overnight)
When ready to serve sprinkle the top with some powdered sugar and enjoy
