Dear friends, Im writing from my hometown in Italy. I landed here yesterday morning and I will be here until next Saturday to enjoy some sunny days with my family.
Will try to cook something special while I’m home to share with you, but for today I will be just posting this awesome and super healthy pasta I made for myself before leaving Shanghai-
You guys know I love avocado and feta cheese so I decided to combine them together in this pasta dish. This recipe is really super easy and super quick. It enters into the 15 min-meal idea
Here is the recipe! I’m gonna dash off to the beach!
Ingredients (serves 1):
- 1/2 ripe avocado
- 1/4 small onion
- salt, pepper, cayenne
- 1/2 lime, juice
- 1/2 tbsp. chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 80 g short cut pasta
Cook pasta in salty water according to package instructions, set aside to cool down a bit
In the meantime prepare the guacamole. Cut a ripe avocado in half, remove the internal kernel and scoop out the pulp
chop up the onion
the parsley
in a bowl combine avocado, chopped onion, 1/2 chopped parsley, salt, pepper, cayenne and the juice of half a lime
and stir all the ingredients together
When the pasta is cooked, add it to the guacamole and stir well
crumble the feta cheese
and add it on top
the remaining chopped parsley and serve
Good, healthy and easy
