I while ago I made this Banana Cake with Cinnamon Cream Cheese Icing and then, like it happened to me before, I forgot about it…. The recipe is from one of my favorite vegetarian food blog, www.amuseyourbouche.com.
I blame the heat of this Inferno someone calls Summer here in Shanghai…I feel like I’ve been cooking alive…, temperature is up to 40 C during the day which, together with pollution and super high humidity levels has made it impossible to do anything but just staying indoor with the air con on.
I’ll try to get myself to cook something soon…for today enjoy this cake my friends.
Ingredients (serves 12):
- 170g plain flour
- 150g granulated sugar
- 1/2tsp baking powder
- 1/4tsp salt 4tbsp sour cream
- 80ml sunflower oil
- 1 egg
- 200g banana, mashed (approx. 2 bananas)
For the icing
- 100g cream cheese
- 100g icing sugar
- 1/2tsp cinnamon
Add all cake ingredients to a large mixing bowl
and beat until well combined
Butter a baking dish
then pour in the mixture
Bake for 25 minutes at 180 C (375 F), or until a knife or toothpick inserted into the middle comes out clean. Set aside to cool.
Meanwhile, mix the icing ingredients together
get the cake out of the pan onto a cutting board and spread the icing over the cake once it is fully cooled.
Cut into bars
