Duchess Potatoes

I’ve been wanting to make duchess potatoes for ages and every time I was about to get myself to, I got lazy and opted for “easier” options…I’m not sure why but Duchess Potatoes always seemed to me very complicated and labor intense…

A few weeks ago I finally decided to stop being so lame and make the damn duchess…Oh guys I was wrong! Making Duchess Potatoes is actually really easy and they look fancy and pretty, perfect for a special dining occasion!

Here is the recipe 🙂

Ingredients (serves 4):

  • 4 medium size potatoes
  • 2 egg yolks
  • 1/2 stick butter, softened
  • 1/2 cup + 1 tbsp. heavy cream
  • 1/4 tsp. salt
  • 1/8 tsp. nutmeg (more to test)
  • black pepper
  • 1 whole egg

Wash, peel and boil the potatoes


Put them in a bowl and mash them down. Allow to cool down


add egg yolks, salt, nutmeg, pepper, butter and heavy cream


Stir all the ingredients together

Transfer to a large pastry bag


and pipe through a large star tip in a circular/upward spiral motion


Chill the piped potatoes for half an hour.

Next, make an egg wash by mixing 1 egg with 1 tbsp. heavy cream. Lightly brush the piped potatoes with egg wash


Bake at 180 C (375 F) until golden brown around the edges



Make ahead tip! Store in the fridge, then bake them at the last minute!
