I cannot believe I haven’t posted anything new on EC for the past week. I am ashamed of myself and terribly sorry. My schedule recently is some how hectic as, besides my full time job, and my cooking classes I have now started shooting cooking podcasts and have also started working on a new amazing cooking project. All this is fun and challenging but it has also made my life quite crazy. So crazy that I almost forgot to share with you this awesome cookie recipe!
I made these cookies a couple of weeks ago to celebrate my cooperation with Fabbri. I made them and whipped them off in less then 24 hours…this is the kind of addiction that I have…
This is my standard recipe for oatmeal cookies, but this time, instead of using raisins, or cranberries I used the delicious Fabbri Amarena!
You guys try and let me know what you think!
Ingredients:
- 2 cups oats
- 1 cup flour
- 1 cup Amarena
- 1/2 cup butter (softened)
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 2 eggs
- 1 tsp vanilla flavor
- 1 tsp baking powder
- 1 tbsp flaxseeds
- 2 tbsp vegetable oil
In a bowl of your electric mixer combine the sugars and butter
and cream them on medium speed. Crack in one egg at a time, mixing well after each addiction
In a separate bowl combine flour, oats and baking powder
and slowly add that into the wet ingredients together with the vanilla powder. Add the flaxseeds and vegetable oil.
Next up grab your Amarena (black cherries in syrup), cut them in half and add in about 1 cup.
Stir slowly
Scoop 1 tbsp of dough onto baking sheet
and bake in pre-heated oven at 180 C (375 F) for about 10-12 min. Remove the cookies fro the oven and let them cool down on a wire rack.
Enjoy with a cup of ice tea or milk
