You guys know I am not a huge fan of beans, I eat them because they are healthy and very good for my body, which is why I always try to find alternative, tasty recipes to incorporate them into my diet.
This time I came up with a hummus made with white bean and basil. A perfect summer starter idea – fresh, healthy and easy to make.
Happy Thursday 🙂
Ingredients:
- 1 can Cannellini Beans, drained and rinsed
- 2 cloves Garlic
- 2 Tablespoons Fresh lemon juice
- 6 Fresh Basil Leaves
- ½ teaspoons Salt
- ½ teaspoons Freshly ground black pepper
- 3 Tablespoons Olive Oil, plus more for drizzling
Combine beans, garlic, lemon juice, basil, salt and pepper in the bowl of a food processor. Pulse a couple of times until the mixture looks somewhat chopped. Add in the olive oil while the machine is still running. Let process until the mixture is creamy.
If the mixture appears to be too thick, add in a teaspoon of water at a time to thin it out. Otherwise, season with additional salt and pepper to your liking and drizzle the top with a tiny bit of olive oil. Dip away!
Serve with fresh veggie sticks or toasted bread
