I ran the Jinqiao 8k race last Saturday here in Shanghai! It was such an amazing experience.
Thousands of people gathered together to run and get some exercise. I ran my 8k in about 38 min and got 20th in the female group, which is a result I’m very proud of!

After the race my mom and I went back home for a quick shower before heading to the fabric market to pick up a few items and since it was lunch time and we were hungry I whipped up this quick pasta dish.
This is a great idea for a healthy yet tasty meal if you don’t have lots of time to spend in the kitchen. Here is how you make it!
Ingredients (serves 2):
- 1 whole lemon (juice and zest)
- 200 g bow-tie pasta
- 2 tbsp extra virgin olive oil
- 180 g canned tuna
- 1 tbsp. chopped parsley
- 4- 5 fresh sage leaves
In a bowl combine tuna, lemon zest and chopped parsley
cook pasta according to package instructions, drain it
and add it to the bowl. Squeeze in the juice of a lemon and pout 2 tbsp of extra virgin olive oil.
Sprinkle the top with the grated Parmesan cheese and decorate with a few leaves of fresh sage. Serve immediately!
