Last Christmas my sister got me the KitchenAid ice cream maker attachment. I don’t think I need to say how happy I was! I’ve wanted to buy it for years and always kept on procrastinating, but now I finally have it – Thank sis π
Yesterday, since spring is finally here and it’s getting a bit warm in Shanghai, I’ve decided to try it out. I went to the fruit vendor downstairs my house and bought some fresh blackberries, then grabbed some low-fat/low sugar yogurt and head back home.
Homemaking ice cream, once you owe an ice cream machine, is SUPER easy. I love the fact that you get to decide the consistency you like, how sweet you want it, if you want to make it fat-free or or low in sugar.
I can tell you this ice cream maker will be one of the things I will be using the most in the coming month!
For today, enjoy this low-fat/low-sugar frozen yogurt deli.

Ingredients:
- 1-1/2 cup fresh blackberry
- 1 c low-fat/low-sugar ice cream
- 1/2 tsp lemon juice
- 1/4 cup granulated sugar
- 1/4 tsp vanilla extract
- 1 tbsp water
- 2 tbsp crushed almonds (optional)
In a blender combine blackberries, lemon, sugar and water
and pure them
add vanilla and yogurt and pulse blender a few times to mix all the ingredients together
Transfer to ice cream maker bowl and process acccording to manufacturer instructions
Scoop out ice cream balls into a serving bowl
add some crushed almonds – this is totally optional, but I like the extra crunchness
and serve
Store the remaining ice cream into a container into your freezer.
