Honey Walnut Pumpkin Muffins

This weekend is looking like a VERY busy one!

Here is what I will be doing:


7 am wake up 9 am arrive at Fagor Showroom to get everything ready for the morning Kid’s birthday cooking party 10 am – 12 pm Kid’s birthday cooking party (we will be making pasta and cookies) 12 pm – 1 pm Lunch break 1 pm – 2 pm get things ready for the afternoon cooking demo with Fagor 2 pm – 4 pm Cooking demo for Fagor 5 pm go home REST!!! 7 pm dinner with friends 9 pm friend’s birthday party

and Sunday will be busy as well with cycling in the morning, apartment hunting, lunch with a friend, aerial silk class in the afternoon and then dinner with another friend…I need a 36h day….

Anyway, let’s get some energy from these delicious and healthy muffins. I made them a while ago but did not have time to share them with you until just today. Apologies 🙂


Ingredients (makes 12 muffins):

  • 1-1/2 cup flour
  • 1/4 cup oat bran
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/3 cup honey
  • 6 tbsp sugar
  • 1/3 cup whole milk
  • 1 cup pumpkin pure
  • 1 egg
  • 2 tbsp canola oil
  • 1 cup chopped walnuts

In a bowl combine honey, milk, canola oil, sugar, egg and milk


Whisk well


Then add flour


oat bran


baking powder


chopped walnuts


and cinnamon


Whisk all the ingredients together until well combined then divide the butter into 12 muffin cup (that you will have lined with muffin papers)


Bake at 180 C for about 20 cm or until completely cooked.

Remove from the oven and let them cool down on a wire rack
