Oh boy what a hectic time of the year this is! Right after the Christmas holiday and before the Chinese New Year one, these are 3 weeks of what I call “hell”! I’ve been working really late hours at the office trying to catch up with work and to plan a whole bu\unch of activities for the new year, with ExpatCucina things have been speeding up quite a bit as well, with many requests for cooking classes and Kid’s birthday cooking classes, with Cooking Demonstration for Le Creuset and Fagor and a list of products I have received and that I will be reviewing here in the coming week, or I should better say, as soon as I get some free time…:s
On top of that I am also apartment hunting. Yes I know that it was just one year ago when I moved into my current pad, and despite it being nice and cosy I feel like I want to step things up a bit and get something better, with a big, bright kitchen and possibly a proper oven! Fingers crossed 🙂
I’m sure I am not the only one being super busy during this time of the year, I believe many of you are struggling as well, which is why I have decided to share with you this 15 – min- meal idea. This pasta is super easy and perfect after a long day, when all you need and want is some simple, comfort food that you can whip up in just a few minutes.
Here is the recipe!
Ingredients (serve 1):
- 70 g spaghetti
- 70 g canned tuna in oil
- 1 clove garlic
- 2 tbsp olive oil
- 1/2 lemon (juice and zest)
- 2 tbsp heavy cream
- 1 tbsp grated Parmesan Cheese
- salt and pepper
- fresh sage leaves
Bring some water to a boil and cook pasta according to package instructions. In the meantime put garlic, oil, tuna, lemon juice and sage leaves in a skillet
Turn on medium heat and cook for a couple of minutes, add the cream, stir, adjust with salt and pepper, cook for a couple of more minutes
When pasta is cooked, drain it and add it to the skillet with the tuna cream, stir well
Move into a serving bowl, grate up some lemon zest and fresh Parmesan cheese
Serve immediately
and enjoy it
