Weather in Shanghai has been very cold recently. January and February are, in fact, the coldest months of the year. Coming back from 2 weeks in warm Lecce and 1 week in Thailand, copying with these cold temperature has been particularly hard.
As you guys know, cold = soup for me, tho after all the holiday eating I needed something light and healthy. This recipe is definitely low-fat and will keep you warm!
Ingredients (serves 2):
- 500 g lettuce
- 700 ml chicken broth
- 2 tbsp sour cream or yogurt
- 3 tbsp chopped onion
- 2 tbsp olive oil
- 30 g breadcrumb
- salt and pepper (as needed)
- fresh mint leaves
Chop up the onion and saute’ it into a saucepan with 2 tbsp of olive oil. Wash the lettuce and cut it into smallish pieces. Add it to the onion
give it a stir, pour in the chicken broth, cover with a lid and let cook on low for about 20 min
Drain the lettuce off the cooking broth and move it into a blender
Pure’ the lettuce
Add 30 g of breadcrumb to the cooking broth, then add the purred lettuce, adjust with salt and pepper and cook on low, stirring until soup get creamy
Serve with fresh mint leaves and 1 tbsp of sour cream or heavy cream per serving
You can add some croutons if you like
