While I was back home my mom made this pasta dish for my sis who loves it. I am, honestly speaking, not a huge fan of stock fish, despite it being quite popular in the South, specially in Sicily.
This recipe is very easy and make a complete meal! The sauce, in fact, is perfect to dress some pasta.
Here is how you make it!
Ingredients (serves 6):
- 1 kg of stock fish
- 500 g short cut pasta
- 2 tbsp olive oil
- 2 cans of peeled tomatoes (500 g each)
- salt and pepper
- 1/2 cup flour
- 2 cloves garlic
If your stock fish has been dried, let it sock in fresh water for at least 48h. Then rinse it with fresh water
Season the stock-fish with salt and pepper then dust it with flour
and set aside
In a skillet heat up oil and saute’ the garlic for a couple of minutes
Add the fish
and stir it on both sides until it gets a nice golden color – about 3-4 minutes on each side on low-medium heat
Now add the tomatoes, adjust with salt and pepper
and let it simmer on low heat covered with a lid for about 30 to 40 min. The sauce needs time to get all the flavor from the fish and to get creamy
Meanwhile cook pasta according to package instructions. Drain it and dress it with the sauce. Add a few pieces of fish per serving and bring it to the table!
