Ever since I was a little girl, I’ve always loved eating vegetables. My mom’s family used to own several farms where they cultivated and produced pretty much anything, from vegetable and fruit to cheese, olive oil and wine. After my grandparents passed away, their children (my mom and her brothers) did not continue farming. They rented out and sold most of the farms except for one where we have someone still doing some simple farming just for us.
The other day, my dad got back home with a huge bag of this wild vegetable that we grow in our farm. It has kind of a slightly bitter flavor and my mom and I love it sauteed with some garlic, chill pepper and black olives.
You can try make the same recipe using some simple chicory or any kind of greens that have got a slightly bitter flavor.
Ingredients (serves 8):
- 1 kg of chicory
- 1-1/2 cup Greek black olives
- 2 red chill peppers
- 2 cloves garlic
- 1 tsp salt
- 3 tbsp olive oil
In a sauce pan saute’ garlic and chill pepper
add the vegetable and saute’ them on low- medium heat covered with a lid slightly smaller than the pot you are using. Cook for about 15 min
Next up, add the Greek olives and stir around. Keep cooking for 5-10 more minutes.
Turn off the heat
and serve
nice and warm as a side to some grilled meat!
