because I’m leaving for italy in 2 days
and because I’ve been running around like a headless chicken and had no time to cook anything
I’ve decided to bring to the front page the first soup recipe I’ve ever shared on ExpatCucina: the healthy tomato soup. One of my very favorite of all times!

Ingredients (for 4 servings):
- 3 big tomatoes
- 1/2 onion, chopped
- 1 garlic glove, peeled
- 600 g chicken or vegetable stock
- 2 tbsp butter
- 2 tbsp olive oil
- salt and pepper
- cream (optional)
- fresh parsley
Place pan on medium heat, add oil and butter, stir well and allow to melt. Add the chopped onion and garlic stir to combine. Allow onion to sweat.
Chop up the tomatoes
and add them to the onion together with the stock and salt. When it start boiling covered with lid and turn heat down to a simmer. Leave to cook for 30 min.
Remove from heat and blend into rough puree with an immersion blender (TIP, when blending take care not to raise the blender out of the soup or you will have tomato everywhere in your kitchen…I’m speaking from experience here…).
Add pepper, then sieve the soup
Serve the soup in a soup bowl and add a dash of cream and chopped fresh parsley.
This soup is tasty and light, perfect to warm up the cold winter nights.
