I haven’t made risotto in ages! Can’t even recall when was last time I had one. I have to be honest with you, I am not a huge fan of risotto. It is something that I rarely order at a restaurant and that I almost never crave. However my life in the past months has been so hectic and, specially the past couple of weeks trying to get as much done as possible before leaving for the holiday, I’ve found myself with no time for any grocery shopping.
The other day I got back home for lunch from a business meeting and I was starving so I opened my pantry looking for something to eat. All there was in there, was some brown rice, an open package of goat cheese and some speck, and that’s how this dish was created!
It turned out pretty awesome, to be honest and I’m definitely putting this one into my “to do again” list, also as a fancy idea for dinner with your special one or with your friends.

Ingredients (serves 4):
- 1-1/2 cup brown rice
- 1 small red onion
- 150 g speck (or bacon)
- 100 g goat cheese
- 1/3 cup grated Parmesan cheese
- 2 tbsp butter
- 2 tbsp olive oil
- 2 cup vegetable broth
- ground black pepper
- 1 t
Chop up the onion
the speck (or bacon)
and saute’ it into the oil add the speck and cook for a couple of minutes on medium
add the rice and toast it one low-medium
then slowly pour in the broth, about 1/2 cup a time waiting for the rice to absorb it before adding more
When the rice is almost cooked, add the crumbled goat cheese and stir well
Turn off the heat, add the butter half of the Parmesan cheese, stir again
and serve decorating each plate with some chopped parsley and with more grated Parmesan cheese
Serve immediately!
