Coconut Pie in Honey Graham Crust

It’s pie time! Oh yeah baby.
Thanksgiving is just a couple of weeks ahead of us so it’s time to start baking. I love this time of the year, defenitely my favorite one!

This pie is easy, very fresh and well quite tasty.

I brought it to my friend Alison’s house party yesterday night.

People did seem to like it. Hope you guys will enjoy it too!

Ingredients (one 9 inch pie):

for the crust

  • 120 g grahm crackers
  • 1.5 tbsp honey
  • 50 g butter

for the filling

  • 1 pack coconut pudding mix
  • 500 ml heavy whip cream
  • 5 tbsp sugar
  • 1/4 cup shredded coconut flakes (sweeten)
  • 1-3/4 cup milk

Lets start from the crust! In a food processor and make into crumbs

add the honey

melt the butter

and pour it into the crumbs

mix well then press crust onto a pie pan

Next up, sprinkle the coconut flakes and refrigerate while you are making the filling

Grab the coconut pudding mix

and preparing by whisking it for 2 min with 1-3/4 cup cold milk

Pour onto the pie crust and spread evenly. Refrigerate

Now whip up the heavy cream with 5 tbsp of sugar and using a pastry bag with a star tip to decorate the top of the pie

Refrigerate for a couple of hours
