Recently I’ve been very much into experimenting with unusual recipes, something a bit healthier, low in fat and possibly gluten-free. I haven’t done this for not particular reasons other than pure personal curiosity.
This muffin recipe is definitely something that got my attention as it does not use any kind of flour but only cooked chickpeas. I was very skeptical and thought this was gonna come out as absolutely disgusting. I was, instead, very pleased with the result and I am so making these muffins again!
Here is how you can make them too!
Ingredients (makes 12 muffins):
- 1 can of garbanzo beans (250 g drained product)
- 1/3 cup almond milk or or skim milk
- 2 eggs
- 2 tbsp coconut oil
- 1/2 cup premium cocoa powder
- 1 tsp baking powder
- 2/4 cup granulated sugar
Wash and rinse the chickpeas then add them together with the almond milk (or skim milk) to a blender or food processor.
Puree until very VERY smooth then add the sugar and eggs one at a time, blending after each.
Next up add the cocoa powder and baking powder
and the coconut oil blend until smooth.
Pour into greased muffin tins or cupcake liners
and bake at 180 C (375 F) for 25 minutes or until a toothpick inserted into the middle comes out clean. Let them cool down on a wirerack.
Enjoy them as an healthy breakfast or snack
