Light and nutritious warm soup perfect to warm you up on cold winter days!

It’s that time of the year again when temperature suddenly drops, I get sick and need soups to recover. This is now normal winter routine in my life!
So yes, I’ve got this cold that I’m trying to fight. I haven’t had much of an appetite the past few days, all I was craving was a nice, warm soup to help me feel better. This one definitely did his job!

The recipe is an adaptation of mine from the Chicken and Rice soup of Pioneer Woman.
Ingredients (serves 2):
- 1 whole chicken breast
- 1 vegetable bouillon cube
- 1/2 cup brown rice
- 1 tbsp olive oil
- 1/2 cup carrot, chopped
- 1/3 cup celery, chopped
- 1/4 cup onion, chopped
- 2 tbsp heavy cream
- 1 tsp seasoned salt
- 2 tbsp butter
- 2 tbsp flour
- 1 tbsp turmeric powder
Wash one whole chicken breast then place it in a pot with the vegetable bouillon cube
add water. Bring it to a boil and let simmer until chicken is cooked. About 20-30 min, or so
When chicken is cooked, remove it from the pot, let it cool. Keep the broth, we are going to use it in a minute
Next up, chop some onion
In a pot heat up some butter and throw in the vegetables. stir around. Add seasoned salt
Pour in the chicken broth
then cover with a lid and let simmer for about 15 min
In the meantime, cook 1/2 cup of rice with 1 cup of water and 1 tbsp of olive oil. Do so because your rice is going to taste divine
Now shred the chicken
and add it to the pot, taste and adjust with salt if needed. Add the cream and keep cooking for 10 more minutes.
stir around the rice, which should be cooked by now and no, don’t eat it pls….wait a second
Laddle the soup into serving bowls
then add about 2 tbsp of cooked rice in each (or more if you like)
and serve immediatelly nice and warm.
This is a delicious winter soup!
