This recipe is certenly not going to win ANY culinary price, but this is pretty much what is going on in my kitchen right now: simple – light and healthy food.
I’ve been so busy that I really haven’t had time to cook anything more fancy but I promise I’ll make it up to you this weekend sharing with you some tasty treats!
Today, enjoy this lemon baked cod fish 🙂
Ingredients:
- 120 g cod fish
- 1 tbsp extra virgin olive oil
- 1/2 lemon, juice
- 1/8 tsp salt
- 1 tsp Italian herb mix
- 2 tbsp breadcrumbs, panko
In a bowl combine olive oil, lemon juice,salt and Italian herb mix. Give it a stir to mix all the ingredients together
Next up, grab the cod fish and dip it into the marinate coating it well on both sides. Let it stand there for about 20 min
Then coat it into panko breadcrumb
and move it onto a baking tray, pour on top of it the remaining marinate and bake at 180 C for about 30 min
DINNER IS READY! Serve it with a side of fresh salad or some pasta!
