I made this for breakfast last weekend. It wasn’t planned or anything, I just made it with what I had at home. I knew Alex was coming over to bring me fresh juices first thing on Saturday morning and I felt I had to reciprocate by offering something to eat. So I opened my fridge and grabbed what I had on hand. The result was this, I can say, quite tasty breakfast.

Ingredients (makes 4 pancakes):
- pancake batter
- 2 big bananas
- 1/4 cup strawberry jam
- 1 tbsp powdered sugar
- 2 tbsp corn syrup
Prepare the pancake batter following your preferred recipe, then chop up a banana and drop it in
Gently folding it into the batter. Lightly grease a skillet with cooking spray, when hot drop 1/4 cup batter and cook the pancakes on each side for a few minutes
When all your pancakes are ready, spread about 1 tbsp of strawberry jam on each and pile them up into a tower
Next up, slice up the remaining banana and drop it onto the pancakes then sprinkle powdered sugar on top
Right before serving pour in the syrup
Oh boy I did enjoy this breakfast.
