Holiday is over and I’m back to the office. Yes last week was national holiday here in China, Shanghai got empty and I got to enjoy some quite and peace here. I did not leave, I stayed and kept working on my new project which I will tell you more about soon, very soon!
Over the holiday I did get some private cooking time and this salad is what I made myself as a side to my orange marinated pork, whose recipe will be the next posted here on EC.
Today let’s make this fresh tasty salad!
Ingredients (serves 3)
- 2 big juicy oranges
- 10 black olives
- 1 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar
- 1 tsp sugar
- 1/2 red onion
- 1 tbsp chopped fresh mint and parsley (plus a few more whole leaves)
Start by peeling off the skin of your oranges and slicing them up
Chop up about 1 tbsp of fresh mint and parsley
in a bowl combine vinegar, sugar and olive oil then add the chopped fresh herbs
Drop the black olives onto the orange slices
slice up the red onion and add that to the dressing. Let it sit for about 10 to 15 min.
and add that to the dressing. Let it sit for about 10 to 15 min.
Then pour in the dressing with the onion and herbs onto the oranges
drop a few more fresh leaves of mint and parsley
and refrigerate for 30 min before serving
This time in the fridge not only will make the salad nice and chill
but it will also give time to the ingredients to “fall in love” with each others.
