Hello world! I’m still in Italy, enjoying some nice sunny days, the Mediterranean, seafood, family and friends. Sadly my vacation is almost finished and Monday I will be flying back to Shanghai.
Those 2 weeks home have been amazing and it’s always hard to leave, but lots of things are waiting for me in Shanghai: my friends, my job, my cookbook and many more so, all in all, I can say to be also looking forward to head back.
Last week my mom and I made this pizza rolls. She had some homemade frozen pizza dough so we thought of baking something to bring to the beach for lunch. Here is what we made.
Ingredients:
- 1 batch of pizza dough
- 1/3 cup tomato sauce
- 150 g mozzarella cheese
- 1 grilled eggplant
- 1/2 cup chopped arugula
- 1 tbsp olive oil
- salt
We defrost our pizza dough by keeping it in the fridge overnight
Then the following day we rolled it out onto parchment paper
Next up, we grabbed some homemade tomato sauce
and spread on it a layer on the dough leaving just 1 inch on one of the edges
Meanwhile my mom was grilling the eggplant
which I lay on the tomato sauce. Then we sliced up some mozzarella
and added to the pizza
together with some fresh arugula. Last we sprinkled some salt and drizzled some olive oil
We rolled it up toward the edge that you have left without dressing
and then we slicesd it into 2.5-3 cm rolls that we let stand on the counter for about 1 hour
When the rolls were doubled in size, we baked them at 180 C for about 30 min.
We removed them from the oven, let them cool down.
They were pretty good warm and cold
